Shredded Mexican Chicken (Crockpot)

1 pound boneless skinless chicken breasts
1 jar salsa
1 packet taco seasoning

Pour the taco seasoning into one of those gallon-sized ziploc baggies and add the chicken. Shake until all chicken is well coated, then put in crockpot. Add the jar of salsa. Cook on low for 8-10 hours. Shred the chicken and mix well. Done!

I used Trader Joe's taco seasoning and Trader Joe's Chipotle salsa

I can't believe I haven't made this recipe sooner! It's rather high in sodium but next time (in about 10 minutes) I will use my own taco seasoning and my homemade Super Salsa! Then I'll update the nutrition info.

Yummy!

This is a great go to recipe for me! I add a tad of ff sour cream when its done and yummo! Sometimes I don't bother with the taco seasoning and its still just as good. Thanks for sharing the nutrition info!!

Hi Lanae, I've been serving it over a salad with a couple tablespoons of fat-free sour cream- it's so good, and filling!

Laura, this recipe looks super easy. Gonna give it a try. I like to make these types of meals on sundays when I cook up chicken, salsa and other "go to" items for my week.

Enjoyed reading your blog and thank you for your supportive comments. Needed the pick me up.

Gracias.

Hi Paula, your welcome and thank you :) This recipe is SO easy and as a matter of fact, my husband loved it so much (he doesn't normally eat "my" food) I have his own special batch in the crockpot right now, LOL!
