Recipes

Salsa:
4-5 tomatoes, each cut into halves, then thirds
1 red onion, cut in half, then thirds
bunch of cilantro, leaves
juice of 1/2 lime
1 jalapeno, cut in half, seeded, then thirds
1 habanero, cut in half, seeded, then thirds

Put handfuls into Ninja (or whatever food chopper) and pulse until chopped to desired consistency. Store in fridge in air-tight container for up to a week.  I use this on just about everything!

Hummus:
1 can chickpeas, drained, rinsed, and peeled
1/4 cup tahini
2 Tbsp lime juice
1 Tbsp minced garlic
handful cilantro
1 jalapeno, cut in half, seeded, then thirds
pinch salt
about 1/4 cup water (or you can use the chickpea liquid) depending on how creamy you like it.

Put everything (except the final liquid) in Ninja (or whatever food chopper) and pulse until creamy. Add the liquid to reach desired consistency.  Store in fridge in airtight container for up to a week.  Definitely tastes better after it's chilled for at least 6 hours.  I eat this with CrunchMaster crackers. The crackers are only 120 calories for 16 crackers and they are super yummy :)

Overnight Oats:
1 banana, mashed
1/3 cup old-fashioned oats
2/3 cup almond milk (or whatever non-dairy milk you prefer)
1 Tbsp ground flax
1 tsp pure vanilla extract
1 Tbsp non-dairy chocolate chips
1 Tbsp Chocolate PB2

I make this at night before bed.  Mix everything together in an air-tight (pint-size works best) container and then put in fridge overnight. In the morning, grab and go :)
